After completing a successful layover in Istanbul in April 2016, I was all for spending a few extra hours in a new city. On my way to Los Angeles over Memorial Day Weekend, I made a quick stop in Minneapolis on Sun Country Airlines. The train connecting the airport to the city is extremely easy to navigate and I ultimately had two options based on timing, go right and to the Mall of America to spend my time window shopping and eating or go left and venture into the Twin City. I chose left. I had never thought of Minneapolis as a destination but I’m open to going back to experience the city on more local terms.

The easiest way for me to get around the entire city in just 3 hours was to rent a bicycle. Okay, I didn’t quite get around the entire city but I covered a lot of ground on two wheels and it was cheap ($7). It also helped rejuvenate my tired legs on the layover.

The one thing I researched before landing was food and I wasn’t disappointed by my options. I ultimately settled on the Jucy Lucy at Matt’s Bar – home of the original. According to Wikipedia, a Jucy Lucy or Juicy Lucy is a cheeseburger that has the cheese inside the meat patty instead of on top, resulting in a melted core of cheese within the patty. You read that correctly: melted core of cheese. It was so. good. Whatever it’s called and however it’s spelled, it’s 600 calories of pure goodness.
